Wheat-free Protein Pancakes

I love eggs and eat them for breakfast almost every day, but sometimes I need a little variety. Enter protein pancakes. Super easy, super fast, super yummy.

Start with two eggs
Whisk them together, and add 1 scoop of protein powder (I like chocolate) and 1/4 teaspoon of baking soda. Once the batter is mixed well, pour it into a greased and heated pan:

Cook for a minute or two each side (I never time it, I just flip when bubbles appear). I top mine with a tablespoon of natural peanut butter (read: salt and peanuts are the only ingredients).

Enjoy! They are definitely more dense than traditional pancakes, but very tasty. The recipe makes one 6" pancake. Here's the nutritional info (including the peanut butter):
